Organic Green Olives of Halkidikis’ variety, harvested from mid-September to mid-October. The curing process of Debitterness and Fermentation is taking place in a traditional natural way without the use of Caustic Soda (sodium hydroxide) or other chemical additives.
The olives ferment from three to eight months in natural brine (sea salt & water). Natural method maintains the beneficial ingredients and nutritional value of the olive.
